This Creamy Sausage and Tortellini Soup is the perfect comforting weeknight meal! Made in less than 30 minutes, this soup recipe is full of flavor and makes great leftovers!
Looking for a comforting bowl of soup in a jiffy? Try this Creamy Sausage Tortellini Soup! It has been on my families regular dinner menu rotation all winter and so I thought it was time to share it.

Key Ingredients for this Easy Tortellini Soup:
Italian sausage: to add a lot of rich flavor and protein to this delicious soup.
Aromatics: garlic and onion are the best ingredients to add a lovely aroma to this dish and not to mention the added flavor!
Chicken broth or stock: soup isn’t soup without liquid, right? Chicken broth or stock works perfectly in this recipe.
Tomatoes: I just went for some canned diced tomatoes to keep it simple.
Cheese tortellini: be sure to use refrigerated tortellini, not dried or frozen.
Heavy cream: to give the soup a luscious and creamy texture. Cream adds body and slightly thickens the soup
Spinach: to add texture and some vegetables to the soup.
How to make this delicious soup:
- In a large pot, add the onion and sausage. Brown the sausage over a medium heat until it is no longer pink and the onions are translucent. Add the garlic and stir for about 30 seconds.
- Stir in the broth and tomatoes, then simmer for 10 minutes.
- Next, stir in the tortellini and heavy cream, then simmer for 10 minutes max.
- Remove the pot from the heat, stir in the spinach and enjoy!
Tips about this tortellini soup recipe:
- While you could swap out the Italian sausage for a different meat, I do not recommend it because the flavor of the soup will change drastically. Italian sausage has so much flavor packed into it!
- Use any type of tortellini you love! I always use cheese tortellini but I think spinach tortellini would also be great!
- I recommend using fresh tortellini to keep this meal prep as quick as possible.
- You could add other vegetables or swap out the spinach for kale. My family prefers baby spinach so that’s what I use.
Serving suggestions:
- Top with plenty of parmesan cheese, if you wish!
- Bread is always good with soup! Plain french bread or try these Garlic Cheddar Biscuits.
- Salad is another great option. Just a simple side salad.
- Roasted vegetables are great with just about anything.
Frequently asked questions:
I went with canned tomatoes to keep prep time short and sweet. If you have time to use fresh tomatoes, go for it!
Italian sausage gives this dish a great depth of flavor. I do not recommend substituting it but if you have to, just be sure to taste and season the soup as needed.
I do not recommend substituting the cream because it will alter the thickness of the soup.

Creamy Sausage Tortellini Soup
Ingredients
- 1 pound (500g) Italian sausage
- 1 small onion, diced
- 4-6 cloves garlic, minced
- 4 cups (945ml) chicken broth or stock
- 1 (14oz) (411g) can crushed tomatoes
- 1 (14oz) (411g) can diced tomatoes
- 1 (10oz) (285g) refrigerated cheese tortellini (not dried or frozen)
- 1 cup (235ml) heavy cream
- 4 cups (120g) spinach
Instructions
- In a large pot brown sausage and onion over medium heat until no longer pink and onions are translucent (about 5 min). Stir in garlic for 30 seconds.
- Stir in broth and tomatoes and simmer for 10 minutes. Stir in tortellini and heavy cream and simmer for 10 minutes max. Remove from heat and stir in spinach.
Notes
- While you could swap out the Italian sausage for a different meat it will change the flavor drastically. Italian sausage already has so much flavor packed into it which is what flavors this soup.
- Feel free to use whatever flavor of tortellini you have on hand. I always use cheese tortellini but spinach tortellini would also be great!!
- Use fresh tortellini to keep this meal quick.
