This is a great recipe for those upcoming hot days this summer. It is super quick to make so you aren’t spending a lot of time in the kitchen. The lemon pairs very well with the salmon and the dill sauce adds and extra touch. It is a light meal so it will be great for those hot summer nights where you need something quick. Pair it with a salad or some green beans and your meal is complete.
Salmon and Lemon Rice with Dill Sauce

Ingredients
- DILL SAUCE:
- 1/2 c. greek yogurt
- 1 TBSP. chopped green onion
- 1 TBSP lemon juice
- 1/2 tsp lemon zest
- 1 1/2 tsp snipped fresh dill
- RICE:
- 3 1/2 c chicken broth
- 2 c. rice
- 1/4 c onion finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- Zest and juice of 1 lemon
- SALMON
- 4 salmon fillets 6 oz ea
- salt
- pepper
- 2 TBSP olive oil
Instructions

In a small bowl mix sauce ingredients and refrigerate until serving.

In a saucepan bring the chicken broth to a boil.

Pour in rice, onion, garlic powder and pepper and simmer until rice has absorbed all of the liquid. Add lemon zest and juice and stir to combine.

For the salmon heat a large skillet with olive oil over medium heat.

Salt and pepper each salmon fillet and cook 6-8 minutes on each side or until fish just begins to flake easily with a fork.

Serve with rice and sauce.
