Salmon and Lemon Rice with Creamy Dill Sauce
Ingredients
- DILL SAUCE:
- 1/2 c. greek yogurt
- 1 TBSP. chopped green onion
- 1 TBSP lemon juice
- 1/2 tsp lemon zest
- 1 1/2 tsp snipped fresh dill
- RICE:
- 3 1/2 c chicken broth
- 2 c. rice
- 1/4 c onion finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- Zest and juice of 1 lemon
- SALMON
- 4 salmon fillets 6 oz ea
- salt
- pepper
- 2 TBSP olive oil
Instructions
- In a small bowl mix sauce ingredients and refrigerate until serving.
- In a saucepan bring the chicken broth to a boil.
- Pour in rice, onion, garlic powder and pepper and simmer until rice has absorbed all of the liquid. Add lemon zest and juice and stir to combine.
- For the salmon heat a large skillet with olive oil over medium heat.
- Salt and pepper each salmon fillet and cook 6-8 minutes on each side or until fish just begins to flake easily with a fork.
- Serve with rice and sauce.
