Print Salmon and Lemon Rice with Dill Sauce Course: Main Servings: 4 Author: Malinda Ingredients DILL SAUCE: 1/2 c. greek yogurt 1 TBSP. chopped green onion 1 TBSP lemon juice 1/2 tsp lemon zest 1 1/2 tsp snipped fresh dill RICE: 3 1/2 c chicken broth 2 c. rice 1/4 c onion finely chopped 1/4 tsp garlic powder 1/4 tsp pepper Zest and juice of 1 lemon SALMON 4 salmon fillets 6 oz ea salt pepper 2 TBSP olive oil Instructions In a small bowl mix sauce ingredients and refrigerate until serving. In a saucepan bring the chicken broth to a boil. Pour in rice, onion, garlic powder and pepper and simmer until rice has absorbed all of the liquid. Add lemon zest and juice and stir to combine. For the salmon heat a large skillet with olive oil over medium heat. Salt and pepper each salmon fillet and cook 6-8 minutes on each side or until fish just begins to flake easily with a fork.
