Ingredients

  • DILL SAUCE:
  • 1/2 c. greek yogurt
  • 1 TBSP. chopped green onion
  • 1 TBSP lemon juice
  • 1/2 tsp lemon zest
  • 1 1/2 tsp snipped fresh dill
  • RICE:
  • 3 1/2 c chicken broth
  • 2 c. rice
  • 1/4 c onion finely chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • Zest and juice of 1 lemon
  • SALMON
  • 4 salmon fillets 6 oz ea
  • salt
  • pepper
  • 2 TBSP olive oil

Instructions

  • In a small bowl mix sauce ingredients and refrigerate until serving.
  • In a saucepan bring the chicken broth to a boil.
  • Pour in rice, onion, garlic powder and pepper and simmer until rice has absorbed all of the liquid. Add lemon zest and juice and stir to combine.
  • For the salmon heat a large skillet with olive oil over medium heat.
  • Salt and pepper each salmon fillet and cook 6-8 minutes on each side or until fish just begins to flake easily with a fork.
  • Serve with rice and sauce.
