    Ok, I know most of you are thinking “rice for breakfast!!  She’s lost it!!”

    Just trust me on this guys.  It is really, really good.  And it’s made in the slow cooker so it’s pretty much hands off!!

    It’s a lot like oatmeal only I would say it’s heartier since we are using rice instead.  Which is totally ok with me!  You could do this with oatmeal if rice is just not your thing, just be sure to use old fashioned oats and adjust your liquids accordingly.

    So, has anyone else realized that Christmas is only two weeks away!!!!!!!!

    Where did the time go??  So, if Christmas is only two weeks away that means the 2016 year is like in three weeks!!!!!!  Scary!!

    It wasn’t that long ago that it was super hot outside and I was grilling everything!

    I remember as a kid that time seemed to just crawl by and my mom would say just wait till you get older.  Well, I’m older, maybe not quite an adult yet, but older 😉 and time goes by in seconds it seems.  The school year is almost half over, we are about to start a new year and a new baby will be arriving in like 3 months, which in my “older” time will be like in 3 weeks!!!!!  I need to start preparing now!!

    Well, maybe I better worry about getting the presents wrapped first!  🙂

    Slow Cooker Apple Cinnamon Breakfast Rice- a great way to start off you day and a nice change from the standard oatmeal. Studded with tender apples and spiced with cinnamon!

    Ingredients
    • 1 1/2 cups brown rice
    • 4 cups apple juice
    • 4 apples cored and chunked you may peel them if you wish
    • 1/2 cup brown sugar
    • 1 1/2 teaspoons cinnamon
    • 1 teaspoon vanilla
    • 1/2-3/4 teaspoon ground nutmeg
    • 1/8 teaspoon ground clove
    • 3 tablespoons butter
    • Additional toppings of choice
    Instructions
    1. Combine all ingredients, except butter, in a slow cooker. Dot the top of the rice with the butter. Cover with lid and cook on high for 2 hours. Spoon into bowls and top with desired toppings.
