Why Youโ€™ll Love This Cheeseburger Soup

Who doesnโ€™t love cheeseburgers?! No one, thatโ€™s who! My household loves them so much that Iโ€™ve added a Slow Cooker Bacon Cheeseburger Tater Tot Casserole and even a Cheeseburger Pasta Skillet dish to our weeknight dinner rotation, but honestly, nothing beats this cheeseburger soup. 

This recipe is inspired by my grandmaโ€™s and I tweaked it a little and tested it out in the slow cooker to make things easier. It turned out just as good as cooking it on the stovetop, except itโ€™s easier because itโ€™s largely hands-free! 

I love crockpot or slow cooker meals because it does all the work for you! With a busy household, I need lots of those in my back pocket, so if you have a busy schedule ahead and need a comforting meal that really hits the spot – give this thick and hearty soup a try!

Ingredients

This soup tastes like it has about a million different ingredients and seasonings in it, but as you can see, this list is quite short and simple! Check out the recipe card below for exact measurements, but hereโ€™s your grocery list: 

  • Lean ground beef
  • Onion
  • Frozen mixed veggies
  • Can of diced tomatoes
  • Chicken broth
  • Milk
  • Cream
  • Shredded sharp cheddar cheese
  • Fresh parsley – optional 

Recipe Tip: Make this a bacon cheeseburger soup by simply adding bacon crumbles when you serve!

How To Make Cheeseburger Soup in a Slow Cooker

Step 1: Brown the Beef

In a large skillet, brown the ground beef and onion until the meat is no longer pink. Drain any grease. 

Step 2: Add to the Slow Cooker

Add the ground beef mixture to the slow cooker along with the veggies, diced tomatoes, and chicken broth. Cover it with the lid and cook on low for 6 hours, or high for 3 hours. 

Note: I like to slightly mash the diced tomatoes before I add them to the slow cooker. 

Step 3: Add Cream and Cheese

About 10 minutes before serving, add the milk, cream, and cheddar cheese. Stir well to combine. 

Step 4: Garnish

Serve your soup with chopped parsley and additional cheese, if desired. Enjoy!

FAQs

What potatoes donโ€™t get mushy in soup?

Potatoes that are low in starch and high in moisture content are best for soup because they donโ€™t soak up as much moisture. Some of the best options are russet potatoes and Yukon gold.ย 

Can I make this soup on the stovetop?

Absolutely! Follow the same instructions except youโ€™ll probably want to cook it for only 3 hours on the stovetop. And donโ€™t set it and forget it! Keep an eye on your stove for safety.ย 

How do I store leftover cheeseburger soup?

Once itโ€™s cooled, you can store your cheeseburger soup in an airtight container in the refrigerator for 3-4 days. Reheat it on the stovetop until itโ€™s warmed through.ย 

Variations and Substitutions 

The beauty of a soup is that you can make adjustments based on what you have available and your personal preferences. Here are some swaps and adds you can make:

  • Use ground turkey, ground chicken, or even sausage if youโ€™d like! 
  • Play around with different seasonings if you think something would taste especially good! Red pepper flakes would be yummy if you want a little kick. 
  • Eat your soup with crusty bread to evoke the sense of an actual cheeseburger.
  • Try different toppings like sour cream, relish, or chopped onions. 
  • I used chicken broth in this recipe, but you can use beef or veggie broth. 
  • Instead of milk and cream, try stirring in some cream cheese so itโ€™s thicker and richer.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion chopped
  • 1 16 oz bag frozen mixed veggies (or if you prefer use 3/4 cup chopped of each- carrots, celery and potatoes)
  • 1 15 oz can diced tomatoes
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup cream
  • 4 cups shredded sharp cheddar cheese
  • Fresh parsley optional

Instructions

  • In a large skillet brown the ground beef and onion until no longer pink. Drain any grease.
  • Put ground beef mixture into slow cooker along with the veggies, diced tomatoes (I like to slightly mash these before I put them in, but that is optional) and chicken broth. Cover with lid and cook on low for 6 hours or high for 3 hours.
  • minutes before serving add in the milk, cream and cheddar cheese. Stir well to combine.
  • Serve with chopped parsley if desired.
