Taco Pasta is a one-pot meal that takes less than 30 minutes to make! Just like Hamburger Helper only a lot healthier!

Taco Pasta

I haven’t posted a one-pot meal in a very long time and with school back in session for most, it seemed appropriate.

I love a good one-pot meal because……. LESS DISHES!

This taco pasta reminds me of that boxed hamburger helper only a whole lot healthier for you. Plus, you can sneak in all kinds of veggies and your kids will still gobble it up.

And if you have been following me for a while or know me you know I LOVE Mexican food.

So, it was only natural for me to make a one-pot taco pasta dish.

It’s cheesy comfort food in a pan……what could be better than that???

Ingredients for Taco Macaroni

They are pretty basic ingredients and for the most part, should be pantry staples.

  • Ground beef (Can use whatever % fat you like. Just be sure to drain off excess fat if necessary.)
  • Onion
  • Spices- chili powder, garlic powder, cumin, oregano, and cayenne pepper
  • Milk
  • Beef broth
  • Pasta
  • Green chiles
  • Cheddar cheese
  • Salsa or tomato sauce

Ingredients

  • 1 pound (500g) ground beef
  • 1 small onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper (or more to taste)
  • salt and pepper to taste
  • 1 ½ cups (355ml) milk
  • 1 ½ cups (355ml) beef broth
  • 2 cups (150g) small shell pasta (can use macaroni)
  • 1 4oz (113g) can green chiles
  • 1 cup (235g) salsa or 1 (8oz) can tomato sauce
  • 2 cups (165g) shredded cheddar

Instructions

  • Heat a large skillet over medium heat. Brown the ground beef, onion, chili powder, cumin, garlic powder, oregano, cayenne powder, salt, and pepper. If using ground beef with a higher fat content add in the seasonings after draining the grease.
  • Stir in the milk, broth, pasta, green chiles, and salsa or tomato sauce. Bring to a boil, cover and reduce heat to a simmer. Cook for 10-12 minutes or until pasta is tender. Stir occasionally to prevent sticking.
  • Stir in cheddar cheese until melted.

    Another hit! We are busy on a farm at this time of year; I want fast, easy to go with whatever salad or veggies are ripe right now. This is soooo good; another hit, I used salsa; I have fresh oregano, cilantro, garlic on hand given the season so substituted there (tons of cilantro for the cumin). I am on a roll with you; so glad I stumbled on your blog looking for home made hamburger helper. I am going to try your oatmeal bread next but will use the bread machine for the kneading (I am 61 and have painful tendonitis so hand kneading is out of the question; my berries and garden push me to the limit). Thank you!
