Creamy Tuscan Chicken

  • This creamy tuscan chicken recipe is a quick and simple meal that is loaded with flavor thanks to the pesto and 5 cheese blend.  Another big plus is that it is on the table in only 30 minutes!!  The cream cheese and 5 cheese blend adds richness and the tomatoes add a burst of sweetness.  My family really enjoys this meal and it is great with pasta.

    Creamy Tuscan Chicken

    • 4 boneless skinless chicken breast halves
    • 4 oz cream cheese
    • 1/4 c. water
    • 1/4 c. pesto
    • 2 c. grape or cherry tomatoes my family prefers the grape
    • 1 c. finely shredded italian five cheese blend
    1. Heat a large nonstick skillet sprayed with cooking spray on medium heat.
    2. Add chicken, cover and cook for 5-7 minutes on each side or until meat thermometer reads 165 degrees.
    3. Remove from skillet and keep warm.
    4. Add cream cheese, water, pesto and tomatoes to skillet. Cook for 2 minutes or until cream cheese is melted, stirring occasionally.
    5. Return chicken and spoon sauce over chicken.
    6. Remove from heat and sprinkle with five cheese blend. Cover to melt the cheese.
