Creamy Cucumber Salad
This creamy cucumber salad is a perfect and easy side dish for summer. It pairs well with beef, chicken, pork, or seafood. Made with simple ingredients, it creates a fresh and flavorful salad.

Before You Get Started
CUCUMBERS: For the best results, use English cucumbers, as they have fewer seeds and less water, which helps prevent the dressing from becoming watery too quickly. If you prefer to use regular cucumbers, make sure to peel and deseed them. Keep in mind that the longer cucumbers sit in the dressing, the more watery it will become.
ANOTHER ALTERNATIVE: You can toss the sliced cucumbers with 1/2 teaspoon of salt and let them sit for 20 minutes. You will see a pool of water at the bottom of the bowl. Pour this out and pat the cucumbers dry. Use in your recipe, and you will have deliciously crisp cucumbers!
FRESH DILL: Fresh dill significantly enhances the flavor of this salad. If you can’t find fresh dill, you can substitute it with 3/4 to 1 teaspoon of dried dill. Since dried dill is more potent, start with a smaller amount, then taste and adjust as needed.

How To Make Creamy Cucumber Salad

STEP 1: Make the Dressing
In a large bowl, combine the mayo, sour cream, apple cider vinegar, dill, and garlic. Stir well to combine. Add salt and pepper if desired.

STEP 2: Slice the Cucumbers and Onion
Slice the cucumbers and onion. Toss with the dressing. Serve immediately, or for better flavor, chill, covered, for 30 minutes.
***KITCHEN TIP: Use a mandoline to achieve perfectly even slices. Just be careful not to slice too thinly, as they will become limp and watery quicker.

Storage and Make-Ahead:

MAKE-AHEAD: Make the dressing up to 2 days in advance, then toss with the cucumbers and onion when ready to serve or closer to serving time.
