In my humble opinion, overnight oats are the perfect breakfast. They’re quick, convenient, and filling! They’re super versatile too — there are so many flavor options! This recipe for cheesecake overnight oats with lemon just happens to be one of my favorites.

The fact that you can make them the night before is key in my household because when morning dawns, all I have to do is pull them out of the fridge and they’re ready to go.

You can mix your oats up in a reusable container or Mason jar and take it with you to work or pop it into your kid’s backpack for school. Now, that’s convenient.

It’s oatmeal… of course, it’s filling! Plus, there’s not too much sugar or additives in this lemon overnight oats recipe, so it won’t cause a big sugar crash halfway through the morning. Lemon cheesecake for breakfast with NO sugar crash? I’m in! 

I know I seem passionate about the whole overnight oats thing, but believe it or not, I’m new to the game. When they first started getting popular, I was turned off thinking about cold oatmeal. I couldn’t bear the thought — but these cheesecake overnight oats are creamy and dreamy! 

Plus, if you still can’t bear the thought of cold oats, you can heat them up in the microwave. I know, I too was shocked when I realized I could do that.

Key Ingredients to Make Lemon Cheesecake Overnight Oats

These lemon cheesecake oats only require a handful of ingredients and about 5 minutes to make! Now that’s a fast breakfast (fast is my favorite kind of breakfast).

  • OLD-FASHIONED OATS – I don’t recommend using quick oats for this cheesecake overnight recipe as soaking them overnight will make them mushy.
  • MILK – I like almond or cashew milk for my overnight cheesecake oats. It adds an extra layer of flavor!
  • LEMON CURD – I use my homemade lemon curd recipe, which I honestly think should be on hand at all times. 😉 It doesn’t take too long to make a batch and it tastes incredible. If all you have on hand is store-bought, that’s fine too!
  • CREAM CHEESE – It wouldn’t be cheesecake overnight oats without some cream cheese! Make sure it’s softened before you get started.
  • HONEY – For a touch of sweetness.
  • VANILLA – Just a bit to inject some warm and earthy flavor into your lemon cheesecake overnight oats.
  • TOPPING – I’m a fan of mixing textures, so I’ll often top my oats with crushed graham crackers or nilla wafers. My kids go wild for those! You can also use toppings like chia seeds, raspberries, blueberries, lemon zest, or really whatever strikes your fancy.

Instructions to Make Overnight Cheesecake Oats

Now here comes the fun part!

ASSEMBLE AND WAIT: All you have to do is combine all of your ingredients in a bowl or Mason jar and throw it in the fridge to work its magic. Overnight, the oats will soak in all of the flavors and get that creamy texture we all love!

I will say, overnight oats are a little bit chewier since the oat stays more intact. If you want your oats to be a bit softer, then pop them in the microwave for a minute or so before enjoying them. Cheesecake oatmeal still tastes great warmed up!

FAQ

Why are my overnight oats not creamy?

If your lemon overnight oats aren’t as creamy as you’d like, you probably didn’t add enough milk. Most overnight oats recipes say to use at least double the amount of liquid per serving of oats — I use a 1:1 ratio as the added lemon curd and cheesecake will have the same effect as a liquid. Follow my recipe carefully and you shouldn’t have an issue.

Do I need to soak oats for overnight oats?

You don’t need to soak the oats before assembling your lemon cheesecake overnight oats, but you do need to let it sit in the fridge for at least 2 hours. That said, I always leave mine overnight. The flavor and texture are so much better!

What is best to put overnight oats in?

As mentioned, I swear by my trusty Mason jars! You could also use a small bowl if you plan to enjoy your lemon cheesecake oatmeal at home. Alternatively, a reusable container works just fine.

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup milk almond milk or cashew milk
  • 2 tablespoons lemon curd
  • 1 ounce cream cheese softened
  • 1 teaspoon honey
  • 1/2 teaspoon vanilla
  • topping of choice if so desired: crushed graham crackers or nilla wafers chia seeds, raspberries, blueberries……

Instructions

  • In a bowl or small mason jar combine all ingredients except for toppings. Cover and refrigerate overnight. May warm in microwave if desired.

  4. I haven’t yet tried overnight oats but we make a big batch of baked oatmeal at the beginning of the week to eat all week long and we LOVE it! We will have to try this yet — we are all big lemon lovers!

    • My kids really love overnight oatmeal! Sometimes I would rather have a bowl of hot oats, but this changes it up a little and I would eat baked oatmeal anytime!!!
