How to make Easy Berry Cheesecake Cups:

WHIP THE CREAM: In the bowl of your stand mixer beat the heavy cream, powdered sugar and vanilla just until stiff peaks form. Set aside.

BEAT THE CREAM CHEESE: In another bowl beat the cream cheese until smooth.

COMBINE: Next, add the whipped cream into the cream cheese mixture and stir until combined.

ASSEMBLE: First, spoon a small amount of chopped strawberries into the bottom of each cup. Then top with a little cheesecake filling, followed by some blueberries. Repeat this process one more time. Garnish with extra whipped cream and mint if desired.

Tips for making these cheesecake parfaits:

  • When making the cheesecake filling, be careful to mix the cream cheese and whipped cream together gently. If mixed harshly or over-mixed, all the air will be beat out of the cream. Then you won’t have that fluffy texture.

  • 1 (8 oz package) cream cheese, softened

Fruit

  • 3 cups blueberries

    For my daughter’s half birthday, I decided to make this. We bought raspberries and blackberries instead. And since I already had frozen blueberries I decided to make blueberry cream cheese, then folded it into the whipped cream. Oh, it was delicious. My 2 1/2 year old loved her little treat! Thank you! It was a delight.

    Hi Malinda, I actually adjusted some things and made these for my church, I have a lot of people on the Keto diet and like my husband diabetics so I try to make things they all can enjoy. So I used powdered monk fruit as the sugar and added red raspberries to the fruit combination and they are hit! Thank you so much for sharing
