Baked Strawberries

A Few Recipe Notes About Roasted Strawberries:

  • This is a simple recipe that can be tweaked to suit your tastes!! Consider leaving out the vanilla and using balsamic vinegar for more of a punchy flavor.
  • I love stirring in a small pinch of salt with the vanilla. It adds a little extra something that makes these irresistible.
  • You can use frozen strawberries as a substitute for fresh ones. Just thaw a little bit so you can quarter them. You may also need to bake them a little longer.
Ingredients: strawberries, honey, and vanilla.

Notes On How To Bake Strawberries:

This recipe is super easy but packs a lot of flavor! It is important to cut the strawberries around the same size so they cook evenly.

If you don’t have honey, you can use a sprinkle of sugar or even replace the honey with maple syrup. You can also bake them without a sweetener if you prefer.

Variations:

  • Replace the vanilla with balsamic vinegar or champagne vinegar
  • Add fresh herbs such as rosemary, basil, or mint
  • Use a sprinkle of cinnamon
  • Add lemon or orange juice to brighten the flavor
  • A small splash of red wine before baking also tastes fantastic

Serving Suggestions:

Serve over the obvious choice of vanilla ice cream! Or serve over yogurt, cottage cheese, your morning oatmeal, pancakes, or waffles.

For an appetizer, spoon over baked brie with a small crack of fresh pepper or over some whipped feta cheese. Serve with goat cheese and crackers.

Use with desserts such as angel food cake, pound cake, brownies and ice cream, no-bake cheesecake or regular vanilla cheesecake, chocolate cheesecake, or puree it and stir it into vanilla buttercream.

Ingredients

  • 1 pound (455g) fresh or frozen strawberries
  • 3 tablespoons honey
  • ½ teaspoon vanilla

Instructions

  • Preheat oven to 350℉. Line a baking sheet with parchment paper; set aside.
  • Wash, hull, and cut strawberries in half or in quarters. Place on baking sheet and drizzle with honey. Bake for 35 minutes, stirring once during baking.
    1 pound (455g) fresh or frozen strawberries, 3 tablespoons honey

  • Remove from oven and toss with vanilla. Cool before serving.
    ½ teaspoon vanilla

Notes

  1. STORAGE: Store cooled leftovers in an airtight container in the refrigerator for up to 7 days. 
  2. FREEZER-FRIENDLY: Freeze completely cooled leftovers in a freezer-safe container for up to 1 month. 
  3. I love stirring a small pinch of salt into the strawberries with the vanilla.
