This Brownie Ice Cream Cake is the perfect summertime treat! It has a chewy brownie bottom layer, hot fudge, vanilla ice cream, and a homemade whipped cream topping! And don’t worry I give you lots of options to take it up a notch!
When I think of summer I immediately thing of ice cream. And it happens to be my favorite dessert. It’s cool, refreshing, and comes in so many flavors it never gets boring. So I thought I would create an ice cream cake!

This Brownie Ice Cream Cake has been a big hit this summer at my house! The kids have loved having this for dessert almost every night. That’s one thing about being a food blogger after testing a recipe for a couple rounds then making it for photos there is always plenty of leftovers, lol! And when it comes to sweets I try to get them out of the house so I don’t eat them all!
However, the kids begged not to let this go………… and I caved………. and so we have been eating a lot of ice cream cake. 🙂
Tips:
There are loads of options when it comes to this cake!
- Use any ice cream flavor you want. Mint, strawberry, Oreo, chocolate chip cookie dough, peanut butter cup……..oooooh now I want to make another one!!
- There is a layer of hot fudge sauce in between the ice cream and brownie and you decide if you want to keep it or not. In this layer, you can add crushed cookies (like Oreos), candies (like peanut butter cups), nuts…. you name it.
- I chose to decorate this cake with homemade whipped cream. You can substitute store-bought whipped topping if you prefer or leave it off and decorate it with whatever you are putting in the middle. Drizzle with hot fudge and chopped cookies, sprinkle with nuts, and chopped fruit.
- Also, if you want to go bold and make this a triple layer cake go for it! Make two layers of ice cream (use different flavors) for the ultimate Brownie Ice Cream Cake!!
How to serve:
- You will need to take it out of the freezer for a good 15 minutes before serving. That way it has some time to thaw a little and makes it easier to cut through the brownie layer.
- Use a long serrated knife and wipe it clean after each slice. You can also warm the knife in hot water to help cut through.
- Personally, I am never patient enough to wait and I just make my husband muscle through it, lol!!
Brownie Ice Cream Cake
Ingredients
Brownie Layer:
- 3/4 cup (177ml) canola oil
- 1 1/2 cups (340g) sugar
- 3 large eggs
- 1 tablespoon pure vanilla
- 3/4 cup (100g) all purpose flour
- 3/4 cup (70g) cocoa powder (any type)
- 1/4 teaspoon salt
Ice Cream Layer:
- 1.5 quart (1.41L) ice cream (flavor of choice)
- 1/2-3/4 cup (118-177ml) hot fudge sauce
Whipped Cream Frosting:
- 2 cups (473ml) heavy whipping cream
- 1/2 cup (50g) powdered sugar
- 1 tablespoon pure vanilla
- sprinkles for topping
Instructions
Brownie:
- Preheat oven to 350 degrees F (176 C). Line a 9″ round cake pan with foil leaving enough to overhang around the edges. This will help you to remove it from the pan later.
- In a large bowl combine the oil, sugar, eggs, and vanilla. Add the flour, cocoa powder, and salt. Mix just until combined and no more. Pour into prepared pan. Bake for 30-35 minutes or just until edges are set and a toothpick comes out with moist crumbs. (The toothpick should not be wet with batter). Let cool completely in pan.
Ice Cream Layer:
- Let ice cream soften so it’s easier to work with. Meanwhile, Line another 9″ round cake pan with plastic wrap. Be sure to leave plenty of overhang to cover ice cream with.
- Once ice cream is soft enough spoon into prepared pan and smooth into an even layer. Try to press out any air pockets. Cover with plastic wrap and freeze for 8 hours and up to 3 days.
- Once ready to assemble remove brownie from pan and remove foil. Place on desired cake stand or plate. Spread hot fudge sauce over top of the brownie.
- Remove ice cream from pan and remove plastic wrap. Quickly place on top of hot fudge sauce. Cover cake with plastic wrap and place back in the freezer for 30 minutes.
Whipped Cream Frosting:
- Meanwhile, in the bowl of a stand mixer whip the cream, powdered sugar, and vanilla until stiff peaks form.
- Remove cake from freezer and spread whipped cream all over the ice cream and brownie. You can pipe decorations if you like! Place in freezer for 30 minutes or until whipped cream is solid.
Notes
- Nutrition info calculated using regular vanilla ice cream.
- If serving shortly after making this cake remove from freezer and use a long serrated knife wiping clean after each slice.
- If this has been in the freezer awhile remove and let stand for a good 15 minutes before cutting into it.

I made this cake with raspberry white chocolate ice cream. I topped it with Cool Whip and frozen, chocolate dipped raspberries. It was really good. The brownie was chewy just like the recipe said it would be.

I am making this for nephews this weekend. I used 2 springform pan one I baked the brownie and the other I formed the ice cream. I am going to put the brownie in the freezer a well and then the next day I am making the fudge and going to put it together.
Regarding the whipped cream can I do the the day of the party?

Gonna make this in the next couple of days for my kids birthday. Wanted to know if the whip cream can be piped on for beautiful floral decor? I’m planning on placing an edible picture in the middle and piping with whip cream around it (I’m also assuming I CAN place an edible print on it).

This looks amazing! To make it super quick, could I substitute a boxed brownie mix for the brownie layer? My only concern is that it might freeze differently and be too hard to cut but would

You could try….I didn’t because I was afraid the soft ice cream would soak into the brownie too much before it hardened.
