Well football season is about to end, does that mean I can have my Sunday’s back??  I like for Sunday’s to be family days and to do something fun together.  That is kinda hard in front of the t.v.

The big game is right around the corner so I thought I would put on my thinking cap and create a new chicken wing flavor.  These crispy baked spicy margarita wings hit the spot.  My husband really liked them and he consumes chicken wings on a regular basis.  I also made them healthier by baking them!!

Baking the chicken wings made things a whole lot easier too.  Way less mess and that makes me happy!!  I hate standing there for what seems like forever frying the wings and then having to clean up the mess they make.  By baking them it eliminates it all, I think I will make wings more often even.

Just place your wings in a bowl and toss with olive oil, salt and pepper.  Arrange on a baking sheet without crowding them (this is key to crispy wings) and bake them!!  I lined my pan with foil (to help with clean up) and used a cooling rack (to help make the wings crispier).  While the wings are baking make your sauce.  When the wings are done place them in a bowl and toss with the sauce.  Your ready to serve them to your guests!!

  • Chicken Wings
  • 4 pounds of chicken wings
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • Sauce
  • 1/2 cup tequila
  • 1/2 cup honey
  • 1/3 cup lime juice
  • Zest of 1 orange
  • 2 cloves of garlic minced
  • 2 teaspoons salt
  • 3/4 teaspoon cayenne pepper
  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and place a cooling rack on top.
  2. Place wings in a large bowl and toss with olive oil, salt and pepper. Arrange on a baking sheet so they have plenty of space between each. (This will ensure crispy wings) Bake for 45 minutes. I also like to broil mine for a few minutes to lightly brown the skin.
  3. While the wings are cooking combine all the ingredients for the sauce in a small saucepan and bring to a boil. Reduce heat to a simmer and reduce the mixture by half. Let cool until ready to use.
  4. When the wings are done cooking place in a bowl and gently toss with the sauce.
