Why You’ll Love This Homemade Skillet Cookie
This may shock you, but this is my first ever pizookie! It’s safe to say, I’m now hooked. Forget the hassle of scooping out individual cookies, just dump all the dough into a cast iron skillet and soon you’ll have a giant cookie everyone will lose their minds over.
This skillet cookie comes out crispy around the edges with a warm and soft center that’s just begging for a dollop of ice cream on top. Drizzle it with hot fudge and you’ll be in dessert heaven!
Today I made a monster cookie because my kids absolutely love the color, flavor, and texture, but you can make whatever kind of cookie you want! Use only chocolate chips to keep things classic, or mix in chopped Reese’s, oats, etc. This is a choose-your-own-adventure skillet cookie!
Ingredients
The beautiful thing about a skillet cookie is that the magic is in how it’s baked. Of course the recipe has to be good, and I’ve provided the ingredients for that below, but you can use another recipe like my double chocolate peanut butter cookies and get the same pizzookie goodness we all love.
For today, though, try these Monster cookies! They’re great year-round, but especially popular during the Halloween season.

How to Make a Monster Skillet Cookie
Step 1: Preheat and Prep
Preheat the oven to 350 degrees F and lightly grease an 8-inch cast iron skillet. Set aside for later.
Step 2: Mix Sugars
In a large bowl, or the bowl of your stand mixer, cream together the peanut butter, butter, brown sugar, and sugar until it’s light and fluffy. Add in the egg and vanilla and mix until combined.
Step 3: Combine Batter
In a small bowl, combine the flour, oats, baking powder, baking soda, and salt. Add these dry ingredients to the creamed mixture and mix until just combined. Add in the chocolate chunks, M&Ms, and peanuts or raisins. Mix this together until combined.
Step 4: Bake
Spread the dough into your prepared cast iron skillet. Bake your cookie for 15-18 minutes, or until it’s lightly browned around the edges. Enjoy!
FAQs
You don’t have to refrigerate it, but it’d be great if you did! Refrigerating for even 30 minutes can allow for the moisture to absorb into the dough which results in an even chewier cookie.
If you use the measurements in this recipe in an 8-inch skillet, it’ll be done in 15-18 minutes. If you’re basing things on how the cookie looks, it’ll have golden edges (not brown) and it’ll be slightly lighter golden on the rest of the cookie.
Once it cools, you can slice up the remains of your skillet cookie and store it in an airtight container at room temperature for up to a week.
