Why I Love These Pepperoni Pizza Pockets

My family really loves pizza. We eat it at least once a week in its various forms, and one of my kids’ favorite variations is pepperoni pizza pockets! Instead of buying more and more of the frozen kind, I created this recipe so I can save money and switch up the fillings every once in a while. 

You can make this whole recipe from scratch! You can whip up your own pizza dough and sauce, or you can buy your favorite premade versions from the store. Either way, this recipe is going to get you major brownie points with your family!

They are great to throw in lunches or enjoy as an after-school snack. And as I said, you can switch up the filling every once in a while based on what your kids are enjoying at that moment. Mine are currently obsessed with pepperoni, but I think I’m going to make myself a batch of mushroom and onion pretty soon.

Ingredients to Make Homemade Pizza Pockets

Making dough can sometimes intimidate people, but I promise you can do this! All you need for the dough is milk (heated to 100 degrees F), olive oil, sugar, salt, bread flour, and active dry yeast. 

Then, to make the filling you’ll only need your favorite pasta sauce, mozzarella cheese, and some pepperoni! 

How To Make Pepperoni Pizza Pockets

Step 1: Start the Pizza Dough

Combine all of the dough ingredients in a large mixing bowl and combine well. Knead the dough on a floured surface for ten minutes, and then put it in a lightly greased bowl and cover it with a towel. Allow the dough to rise for 20 minutes. 

Step 2: Prepare to Assemble

Preheat the oven to 400 degrees F and turn your dough out onto a floured surface. Divide it in half so it makes it easier to work with, and roll one of the halves into a 12×15 inch rectangle (doesn’t have to be perfect). 

Step 3: Cut Dough

Use a cookie cutter or whatever you have on hand to make circles in your dough. I used a small pyrex bowl that was 6 inches in diameter to make my circles and I cut around them. Save the remaining scraps of dough to roll out again and make more circles for your pockets. 

Step 4: Add Filling

Put two tsp of pasta sauce in the middle of the dough circle and top with shredded mozzarella cheese. Add four slices of pepperoni to the top and then fold the dough in half and seal. Repeat for the remaining dough circles. 

Step 5: Bake

Place the assembled pockets on parchment-lined (or lightly greased) baking sheets and then bake for 15-20 minutes. 

FAQs

What other pizza “toppings” can I use for the filling?

Whatever you’d usually put on your pizza! You can use sausage, mushrooms, onion, peppers, or even the extremely divisive pineapple!

Is it better to cool the pizza dough?

No, not in this case! Allow your dough to rise at room temperature and roll it out at that temperature too. There’s no need to cool it. 

Can I make my pizza pockets bigger?

You certainly can, just keep in mind that the cooking times will vary. But the easiest way to do this would be to cut larger circles, or layer two circles on top of each other with the filling in the middle. Just be careful not to put too much filling in or it will burst out while cooking.

Ingredients

  • FOR THE DOUGH
  • 1 2/3 c. milk 100 degrees F
  • 2 TBS. olive oil
  • 2 TBS. sugar
  • 2 tsp. salt
  • 4 1/2 c. bread flour
  • 2 tsp. active dry yeast
  • FOR THE FILLING
  • 1 jar of your favorite pasta sauce
  • mozzarella cheese
  • pepperoni

Instructions

  • FOR THE DOUGH
  • Combine all the ingredients in a large mixing bowl and combine well.
  • Knead on a floured surface for ten minutes.
  • Put in a lightly greased bowl and cover with a towel.
  • Let rise for 20 minutes.
  • *You can also put everything into your bread machine according to your manufactures instructions.
  • FOR THE ASSEMBLY
  • Preheat oven to 400.
  • Divide the dough in half. (Just makes it easier to work with)
  • Roll one of the halves to about a 12×15 inch rectangle.
  • You may use a cookie cutter or make a temple out of cardboard. Just something to make circles in your dough. I used a small pyrex bowl that was 6 inches in diameter to make my dough circles. Just cut around the bowl.
  • You can also save the scraps to make more pockets.
  • Put 2 tsp. of pasta sauce in the middle of the dough circle.
  • Top with 1 TBS. shredded mozzarella cheese.
  • Top with 4 slices of pepperoni.
  • Fold dough in half and seal.
  • Repeat for other circles.
  • Place on parchment lined baking sheets or just lightly grease them.
  • Bake for 15- 20 min or until golden brown.
