These Simple Roasted Green Beans are a really quick side dish that will add nutrition to any meal!

I hate soggy vegetables and always have.  My mom and grandma never made soggy veggies either, so it’s just in my blood.  That’s why I love these so much because they are ultra crisp, quick, easy and add a boost of nutrition to round out any meal.  They always go great with old fashioned meatloaf and mashed potatoes with mushroom gravy! 🙂
It’s best if most of the green beans can be in a single layer on the pan to ensure they stay crisp. Â I tossed these in olive oil and gave them a sprinkle of salt and pepper. Â Something else that I do sometimes is add in a little minced garlic towards the end of cooking, yum! Â When I cook the this way I serve them with an Italian dish, but they would go great with any meal.

- 1 1/2 pounds green beans trimmed and washed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2-3 cloves garlic minced (optional)

Preheat oven to 400 degrees F.

Place green beans on a large baking sheet and toss with olive oil, salt and pepper. Arrange into a single layer as best you can. Bake for 15 minutes. If desired toss the garlic with the green beans in the last 5 minutes of cooking. Don't cook the garlic too long or it may burn.
These are so good and kids love them when they are not cut as they can pick them up with their fingers.
