I hate soggy vegetables and always have. My mom and grandma never made soggy veggies either, so it’s just in my blood. That’s why I love these so much because they are ultra crisp, quick, easy and add a boost of nutrition to round out any meal. They always go great with old fashioned meatloaf and mashed potatoes with mushroom gravy! 🙂
It’s best if most of the green beans can be in a single layer on the pan to ensure they stay crisp. I tossed these in olive oil and gave them a sprinkle of salt and pepper. Something else that I do sometimes is add in a little minced garlic towards the end of cooking, yum! When I cook the this way I serve them with an Italian dish, but they would go great with any meal.

- 1 1/2 pounds green beans trimmed and washed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2-3 cloves garlic minced (optional)
- Preheat oven to 400 degrees F.
- Place green beans on a large baking sheet and toss with olive oil, salt and pepper. Arrange into a single layer as best you can. Bake for 15 minutes. If desired toss the garlic with the green beans in the last 5 minutes of cooking. Don't cook the garlic too long or it may burn.
