Why You’ll Love These Chicken and Noodles
This recipe developed like all great recipes do: out of necessity. I needed to use up some chicken breasts and a half package of broccoli, my kids needed mac and cheese, and my husband needed his favorite cuisine – Chinese food. Instead of losing my mind, I combined all three options.
I tossed chicken and broccoli in a simple Chinese food-inspired sauce and then I added pasta to appease my kids. Turns out, all of our cravings that night made for a delicious meal. It’s now one of our go-to dishes because it’s so stinkin’ delicious and easy to make!
It’ll be on your table and tummy in 30 minutes, and it’s full of tender broccoli, flavorful chicken bites, and saucy noodles. Take that, mac and cheese! 🙂
Ingredients
This recipe is so easy to make and the ingredients are no different. You only need three main ingredients (and they’re in the title of the recipe), and then you just need a few more things to make your yummy sauce! I’ve listed the ingredients below, but make sure you look over the recipe card for measurements.
- Chicken breasts – cut into bite-sized pieces
- Fettuccine pasta
- Broccoli florets
- Olive Oil
Chicken and Broccoli Noodles Sauce
- Soy sauce
- Smooth peanut butter
- Honey
- Hoisin sauce
- Ginger – finely minced
- Garlic – finely minced
- Sesame oil
- Cayenne Pepper – optional
As for toppings, I tend to add chopped green onions and chopped cilantro, but they’re totally optional. Let me know if you try a particularly delicious topping and I’ll have to try it next time!
How to Make Noodles and Chicken with Broccoli
Step 1: Mix Sauce
In a small bowl, combine all sauce ingredients and set it aside for later.
Step 2: Cook Pasta and Broccoli
In a large pot of salted boiling water, cook your pasta according to package directions. Add the broccoli in the last 2-3 minutes of cooking time and then drain immediately. Add the sauce, but reserve 3 tablespoons for the next step.
Step 3: Cook Chicken
While the pasta is cooking, heat a large skillet over medium-medium low heat with olive oil. Cook the chicken with the reserved sauce until the chicken is no longer pink, which should take about 5-7 minutes. Season with salt and pepper to taste.
Step 4: Assemble + Serve
Add the chicken to the broccoli and pasta. Toss everything to combine and serve garnished with toppings, if desired. Enjoy!

Well, that’s a loaded question! If you’re referring to this recipe specifically, so many things would be delicious with this dish! You could add sauteed (or roasted) bell peppers, mushrooms, onions, leafy greens, edamame, etc.!
If the sauce isn’t thick enough, you can make a little slurry with pasta water and flour and then whisk it into the sauce for added thickness.
Allow your dish to cool and then store it in airtight containers in the refrigerator. It’ll be good for 3-4 days and you can heat it in the microwave or on the stovetop. Keep in mind that the sauce will soak into the pasta, chicken, and broccoli over time, so it won’t be as saucy when you reheat it.
Recipe Tips
- It is best to have all of your ingredients chopped and prepped before starting this recipe because you can cook multiple things at once.
- If you aren’t in the mood for chicken, or you have beef on hand that needs to be used, make beef broccoli noodles instead!
- Top your bowl of noodles with sesame seeds, extra soy sauce, red chili flakes, etc. The toppings are all up to you, so have fun with it.
- You can use leftover chicken from the night before or a rotisserie chicken for this recipe. Simply toss it in the sauce instead of cooking it with the sauce and then combine everything else.
- I recommend using fresh broccoli in this recipe, especially as it’s written. If you use frozen broccoli, cook it separately from the noodles and make sure they’re drained before mixing them into the bowl with everything else.
