The kids and I came down with a nasty head cold. 🙁My kids are on the mend, thank goodness and I am starting to feel better as well. Now, just no more sickness because this baby will be coming very soon!I can’t complain too much though, we have been pretty healthy this school year! We were sick a little when school first started and up until now we haven’t had anything. So, I would say that’s pretty good!!Now that the super bowl is over I will be posting a few ideas for Valentine’s. One of them being this delicious salad!Do you guys like Caesar salads? For some reason I always forget about them and then I see or hear the name and instantly crave one. That tangy Parmesan dressing with the cold crisp lettuce is so refreshing.I made this with everyday ingredients, most of which you may already have on hand. I didn’t go the traditional route and use anchovies, so please forgive me if you are a traditionalist.I also replaced mayonnaise with greek yogurt to lighten it up. My husband and I thought it turned out really well. I will say it isn’t authentic but pretty good in my books.This will go great as a side dish to pretty much whatever main dish you are serving this Valentine’s, especially pasta! 🙂 So, tell me what are your plans for this up coming special occasion??? Course: Salad Servings: 4 Author: Countryside CravingsIngredients Dressing 2 tablespoons grated Parmesan cheese 2 tablespoons Greek yogurt 1 tablespoon milk 1/2 tablespoon lemon juice 1/2 tablespoon Dijon mustard 1 small garlic clove minced salt and pepper to taste Salad 1 head romaine lettuce Large garlic croutons optional Parmesan cheese for serving optionalInstructionsCombine all dressing ingredients and refrigerate for an hour. This step is optional but I found it to develop the flavors better.Tear or chop the romaine into bite sized pieces and place into a large bowl. Pour dressing over the top and toss to combine.
