Spaghetti Carbonara

  • You guys this spaghetti carbonara is amazing!!  It has all of my favorite elements: quick, easy, cheese, pasta and bacon!!  What could be better?  Well, ice cream but that’s another story.

    This is a meal that can be made for company or just a casual night at home.  It only has 4 ingredients in it! (yes, you read that right- only 4 not counting salt and pepper)  I am sure you are wondering how can a dish with only 4 ingredients be something so great.

    Well, the ingredients here add a lot of flavor–the bacon adds a smokey salty flavor and the cheese and eggs add a creaminess that is out of this world.

    It is one of those meals you just have to try it to believe it.  It is super easy to make and can be put on the table in 20 minutes!

    It is a winner with both kids and grown-ups so go ahead and make this for supper tonight.  You might even have everything on hand!

    • 1 pound dry spaghetti or linguine
    • 8 slices of bacon cut into small pieces
    • 4 large eggs the fresher the better
    • 1 cup Parmesan cheese
    • Salt and pepper
    1. Bring about 6 quarts of water to a boil. Salt your water well (taste it and it should taste salty) This is an important step because it is the only time you can add flavor to the pasta itself.
    2. Add in the pasta and cook until al dente. Reserve 1/2 cup of the pasta water, then drain.
    3. In a small bowl combine the cheese and eggs. Set aside.
    4. While the pasta is cooking, heat a large skillet over medium heat. Add in the bacon and cook until crispy. Toss in the pasta and reserved water. Remove from the heat.
    5. Add in the egg and cheese mixture a little at a time stirring quickly so not to scramble the eggs. The residual heat will cook the eggs.
    6. Season with freshly cracked pepper and salt if needed. Serve immediately.
