This Healthier Berry Cheesecake Parfait will be a sure hit to serve this 4th of July!
My husband really, really liked this dessert. He is a die hard cheesecake fan so I wasn’t quite sure what his reaction would be when I lightened it up. But to my surprise he really enjoyed it!
My kids did as well, but they will eat just about anything that is sweet. 🙂
This dessert is really simple and quick to make and requires no oven or stove!!! An instant winner in my books especially in the summer time!!
Our house gets hot enough as it is in the afternoon so I absolutely hate turning on the oven! I have resorted to a lot of grilling and salads. Some mild cooking on the stove top isn’t too bad, but even extended amounts of time cooking on the range adds that much more sweltering heat.
So, I lighted this up but using only 4 oz of cream cheese instead of a whole package. I used truwhip, which is a first for me. I was very pleasantly surprised! I tastes a little different than cool whip, but it is a lot better for you! I also added in some greek yogurt and lemon zest. The end result was divine! The lemon zest is a must in my books, it adds a lite lemon flavor that compliments the berries.
So, to get a little off of topic—–my computer crashed again!!!! AAAAAHHHH!!!!
Our friend came over to check it out and it is literally done! It has given it’s all. It has given us 9 solid years of use though and I have been told that is a really long time for a computer.
We were lucky enough that our friend was able to boot it up long enough to get everything important off and long enough I could get a few pictures edited for posting! Yeah 🙂
So, I have been on a quest to find a laptop. There are sooooo many options out there! I think we have narrowed it down though. Wheew, exhausting! Excuse me while I go finish my dessert.

- 4 oz cream cheese softened
- 1 10 oz container truwhip, softened
- 1/2 cup greek yogurt
- 1 tablespoon honey
- 1/2 teaspoon lemon zest
- 5 sheets graham crackers crushed
- Sliced strawberries
In a medium bowl, beat the cream cheese until smooth. Beat in the truwhip, yogurt, honey and lemon zest until smooth.
Evenly distribute the crushed graham cracker crumbs in 6 dessert cups. Top with a single layer of sliced strawberries and blueberries. Evenly divide the cheesecake on top of the fruit. Add another layer of fruit on top. Serve immediately.
