My family (especially my husband) loves berry cheesecake, so I decided to make a healthier and easier version so we can enjoy it more often! This berry cheesecake parfait was a hit in my household, and now we make it every July 4th since it looks so patriotic.

The cheesecake filling is creamy and dreamy! After playing with the recipe a few times I added in some Greek yogurt and lemon zest which was absolutely divine. The lemon zest gives the parfait a light citrus flavor that perfectly complements the berries. 

I just know you’re going to love how easy it is to pull this dessert together – you don’t even have to bake anything! Mix together the cheesecake filling and then layer the rest of the ingredients together. It’ll be ready in a matter of minutes.

Berry Cheesecake Ingredients

This recipe is easy peasy! The cream cheese filling is the “hardest” part and I put that in quotes because it’s not hard at all. Just mix together a few simple ingredients and enjoy!

  • Cream cheese – softened
  • Truwhip – softened
  • Greek yogurt
  • Honey
  • Lemon zest
  • Graham crackers – crushed
  • Strawberries + Blueberries

How To Make This July 4th Dessert

Step 1: Make Cheesecake Layer

In a medium bowl, beat the cream cheese until it’s smooth. Then, beat in the Truwhip, yogurt, honey, and lemon zest until everything is smooth and completely incorporated. 

Step 2: Assemble Parfait

Evenly distribute the crushed graham crackers in 6 dessert cups and then top it with a layer of sliced strawberries and blueberries. Add a layer of cheesecake filling on top of the fruit, then add more fruit on top. Serve immediately and enjoy!

Even though this cheesecake is made in parfait form, you should always make sure the cold ingredients have had time to come to room temperature.

You can make the cheesecake filling ahead of time and keep it covered in an airtight container in the fridge for about 2 days. Once you assemble the parfait, you should serve it immediately so the graham crackers don’t have a chance to get soggy.

  • Use a different kind of fruit! If you don’t care about the color scheme being red, white, and blue, use whatever you’d like as your fruity topping. Peaches would be divine! 
  • Add a drizzle of chocolate, and/or a layer of mini chocolate chips for added flavor and texture. 
  • Forego the berries and instead chop up your favorite candy bar. Imagine a Reese’s cheesecake parfait!
  • Make this a lemon parfait by adding a lemon curd layer. Pair the lemon flavors with blueberries for a delicious treat.

Ingredients

  • 4 oz cream cheese softened
  • 1 10 oz container truwhip, softened
  • 1/2 cup greek yogurt
  • 1 tablespoon honey
  • 1/2 teaspoon lemon zest
  • 5 sheets graham crackers crushed
  • Sliced strawberries
  • blueberries

Instructions

  • In a medium bowl, beat the cream cheese until smooth. Beat in the truwhip, yogurt, honey and lemon zest until smooth.
  • Evenly distribute the crushed graham cracker crumbs in 6 dessert cups. Top with a single layer of sliced strawberries and blueberries. Evenly divide the cheesecake on top of the fruit. Add another layer of fruit on top. Serve immediately.
