Super simple: Yukon potatoes, olive oil, and seasonings. In this recipe I have added garlic powder and fresh rosemary because that is how I usually make these potatoes – they are my go-to! However, feel free to add whatever herbs and spices you like to take this crispy starch to the next level!
The only things I suggest not changing about this recipe are the oven temperature, the oil-to potato ratio, and the spacing of the potatoes on your sheet pan. There’s a delicate balance here, and overcrowding may lead to more steaming which means less crunch!
Otherwise, be creative and use the seasonings that complement your dish, but most importantly, the seasonings you enjoy!
Why Yukon Potatoes are Best for Roasting
I know it seems crazy to most that there are so many different types of potatoes and they all lend themselves to different types of recipes, but it’s true! There are super starchy potatoes, super waxy potatoes, and then the golden child, Yukon Gold.
They have a deliciously smooth center, and their skin is perfect for crisping! I suppose you could use any potato for this recipe if you’re in a pinch, but they definitely wouldn’t come out with the crispiness of Yukon.
Step-By-Step Instructions for Crispy Roasted Potatoes
Step 1: Preheat, Wash, and Chop
Preheat your oven to 450 degrees F while you’re washing and scrubbing your potatoes. Then, chop them into 1-inch pieces.
Step 2: Toss with Seasonings
Place the chopped potatoes in a large bowl and then toss them with the olive oil and seasonings of your choice.
Step 3: Bake
Spread the seasoned potatoes evenly on a baking sheet. Make sure they’re spaced well and have enough room to cook without steaming. Bake for 30 minutes, or until golden, stirring them twice throughout.

Ingredients
- 3 pounds red potatoes
- 1/4 cup olive oil
- 1 teaspoon minced fresh rosemary
- 1 teaspoon salt I usually use season salt
- 1/2 teaspoon garlic powder
- pepper to taste
Instructions
- Preheat oven to 450 degrees F.
- Wash and scrub potatoes then cut into 1 inch pieces. Place in a large bowl and toss with remaining ingredients. Spread evenly on a baking sheet. Bake for 30 minutes or until golden stirring twice.
